In that way you need less chemistry and less sophisticated wine equipment. One stainless steel barrel for fermentation and two, three oak barrels for aging and that&#039;s it. But the drawback of this technique is that grapes need to be perfectly healthy otherwise the wine will soon become too acidic.</description>
