It’s gonna hurt. Dark chocolate truffles with Indian spices

My colleague Cesare is a gifted patisseur. For his birthday he made absolutely the best truffles I ever tried in my life, better than the ones I tried during five years I spent in Switzerland. Outside: dark chocolate covered with bitter cocoa, inside: white chocolate with cream gently aromatized with a mix of Indian spices – cardamom, cinnamon, pepper…

Pairs excellently with one of the top Italian sweet wines – Ramandolo from Zuccolo winery, Friuli. Nice acidity melts the fat from your tongue and great minerals leaves the mouth clean, ready for the next truffle.

If there is restaurant in Istria who needs a good patisseur, expert for chocolate desserts, please hire Cesare and I am sure the number of your guests will double soon! 🙂
