Extravirgin Olive Oil – Oio manjadico

An extravirgin olive oil coming from Medulin (Istria, Croatia) and produced by family Zgrablić. Here you can find out how we enjoyed picking the olives this year and how were they finally transformed into this delicious oil. It is a blend from three olive varieties: 80% Leccino, 10% Pendolino, 10% Ascolana Tenera.

To preserve high concentration of health beneficial polyphenols that is present immediately after the cold pressing of the olives, we do not filter the oil. Filtering removes natural microdroplets of water and polyphenols are hydrophilic molecules that are soluble only in water. Instead, the oil is kept in stainless steel vats under the protective atmosphere of argon and left to deposit naturally. Then, after a month or so we gently decant the oil from the deposit (plant material originating from ground olives) to avoid spoilage of aromas and flavors. If needed, another decantation is done in a month. Finally, the oil is packed in 0.25 or 0.5 L bottles.

Green with golden reflections. Fresh aromas of green apple, tomato leaf and grass are contrasted by sweeter notes of almonds. When young, very wild in the mouth, of intense flavor and very piquant in the finish. After six months becomes more equilibrated, with nice balance of sweet and bitter that makes it a very versatile oil that can be paired even with delicate fish, still keeping a slight spicy note in the long finish.
